In the season when the cold wind blows, I miss a bowl of hot soup. A warm winter delicacy at Hyeonpung Market in Dalseong-gun, Daegu is sugure-gukbap. Sugure-gukbap is a representative food of the common people here, which could be tasted on the Hyeonpung market day on the last May 10th. Even after the permanent market Hyeonpung Baeknyeonkkaebi Market opened, restaurants serving sugure gukbap are delivering the taste of memories with the title of ‘decades of tradition’. The sugure refers to the gelatinous part between the inside of the cow’s skin and the flesh. Gukbap is prepared by boiling it for a long time in a cauldron with a generous amount of sugure, seonji, bean sprouts, and green onions, and brewing a rich soup. The chewy texture is different from the taste conveyed from other parts of the cow. After touring the market, it is good to visit Dodongseowon Confucian Academy and Biseulsan Mountain.
